The best vegan and gluten-free PANCAKES recipe!

I've tried so many pancake recipes and 90% or even more were NOT tasty at all. I don't see the point of eating "healthier" pancakes if they don't taste good so I just gave up.. Until I found this!

If you have non-stick pan you don't have to use oil, but we love to use coconut oil - it makes pancakes even better!

Our favorite toppings are bananas and all kind of berries - and of course maple syrup or recently my dearest coconut nectar!

I drizzle the coconut nectar over my pancakes and fruits.

I love the consistency of this syrup, it's a lot thicker than maple syrup so it lasts longer and doesn't soak in right away (you can buy it here)

1/2 gluten-free pancake mix - the most important ingredient ;) I've tried so many different pancake mixes and gluten-free flours, but this one is unique - pancakes are light, super fluffy and taste delicious!
- 1/2 large banana or 1 small
- 1 cup of almond milk (my favorite is whole food's brand 365)
- coconut oil
coconut nectar (healthier than maple syrup + low GI)

Mix all the ingredients together with a fork or spoon - don't use the whisk, because it's super important to NOT over mix the batter. You can spray pan with coconut oil if you would like. Fry .
the pancakes for 3-4 minutes on each side. Serve with coconut nectar and fruits. Enjoy!
